This steak is cut from small lot, certified pure blood 100% black angus, USDA Prime grade beef from independently owned farms in the Midwest. These happy cattle roam freely on green pasture, with supplemental high quality corn feed.

The ranches we source from maintain the highest animal husbandry standards and most importantly are harvested in a low stress environment with ample time to rest before slaughter. USDA Prime dry aged beef of this caliber is extremely rare.
