Truffle Pigs Standard Beef is a USDA Prime Black Angus from the Midwest, the cattle are allowed to roam and are grain finished to achieve the wonderful marbling and tenderness we have come to love in Prime Grade Beef. The sirloin top cap is known as a Coulotte or Picanha and is a hidden gem on the beef carcass. We cut our cross wise into 1.25'' steaks, and can be grilled with the cap on or off. This is next level sirloin if you haven't had before!
