At Truffle Pig Ltd., we only sell one type of pork: Heritage Berkshire. Yes, it is more expensive, but it’s worth it. Berkshire pork, also known as Kurobuta, is commonly referred to as the wagyu of pork. 

These are the exact ribs we smoke at Next Level BBQ.

Berkshire pork is dark pink to red in color, has very nice intramuscular marbling, and has thick, luscious fat caps, all of which melt down to baste your meat as it cooks. 

Our baby back rib racks are around 2.5lbs per rack or 5lbs to a pack of 2.
