At Truffle Pig Ltd., we only sell one type of pork: Heritage Berkshire. Yes, it is more expensive, but it’s worth it. Berkshire pork, also known as Kurobuta, is commonly referred to as the wagyu of pork

Berkshire pork is dark pink in color, has very nice intramuscular marbling, and has thick, luscious fat caps, all of which melt down to baste your meat as it cooks.

We sell our loins partially trimmed, with quite a bit of fat remaining. This allows us to showcase their natural beauty and further allows you to trim it to your liking. We highly suggest leaving as much fat on as possible if these are to be cooked as chops.

Roast any fatty meat scraps, or even just the fat cap off in the oven for a delicious healthy treat for your dog, if you have one!
