This steak is cut from small lot, certified pure blood 100% black angus, USDA Prime grade beef from independently owned farms in the Midwest. 

Happy cattle roam freely on green pasture, with supplemental high quality corn feed. The ranches we source from maintain the highest animal husbandry standards and most importantly are harvested in a low stress environment with ample time to rest before slaughter. USDA Prime beef of this caliber is extremely rare.

Rest assured that our dry aged beef is mold free and aged correctly in a sterile air environment. Only natural lactic acid bacteria and natural enzymatic processes are allowed in our dry aging environment.
